Whip up an orange cake for Christmas


A Rajasthani family celebrating Christmas in Visakhapatnam.Baking egg-less orange cake and preparing wholesome snacks have become an integral part of celebrating X-Mas festival for other communities.

Meena Gothi, a Rajasthani says that she looks forward to celebrate Christmas by arranging her home with candles and X-Mas tree and treat children with freshly baked cakes apart from crunchy cutlets.

Now being a grandmother, she said that she will hide Christmas gifts under the pillow and socks and make her children and grandchildren to hunt for them. But for her daughter-in-law Abisha, the time is apt to taste orange egg-less cake. “This is the season where the markets are flooded with oranges. The recipe is very simple and takes less than an hour to bake,” explains Meena.

This year, along with the unique cake, she also prepared cutlets using ingredients such as potato, paneer, fresh soya beans, carrot, palak and wheat bread. The veggies were cut into small and cooked thoroughly. All the ingredients are mixed well using required salt, red chilli powder and a pinch of oregano. They are then moulded into required shapes and shallow fried using little amount of oil. Abisha says, “To make it attractive for kids, you can mould it in different shapes like star or heart. It can either be served with sandwich or layered between burger or can be savoured as it is with a combination of sweet and mint chutneys.”

Recipe

Ingredients: Maida 260 gms; milkmaid 1 tin; butter 100 gms; sodium bicarbonate 1 tsp; baking powder 1½ tsp; orange juice – half cup; Miranda – one cup; powdered sugar – 2tsp.

Preparation: Mix maida, baking powder, sodium bicarbonate and powdered sugar in a bowl and sieve them. Add a tin of condensed milk, butter and orange juice and rest of the ingredients and blend in one direction (clockwise) for 15 minutes or until it becomes fluffy. Pre-heat the oven to 90 degree C and place the batter in a greased bowl. Bake the cake by gradually increasing the temperature to 180 degree C. The delicious orange egg-less cake is ready to serve.
