Some cake and a love potion for Valentine’s Day

VALENTINE CAKE

 

Ingredients

Flour- 300 gm

Baking powder- 2 tsp

Butter- 200 gm

Castor sugar- 200 gm

Golden syrup- 150 ml

Eggs – 3

Milk- 300 ml

Apricot jam- 2 tbsp

For almond paste

Almond-250 gm

Icing sugar- 250 gm

Red food colour-

a little

Egg white- 1

Almond essence- 1 tsp

Method

Grease a 24 cm round pan and a square mould of 24 cm. Line the base and sides of these with butter or grease proof paper. Pre heat the oven at 180 C. Sift flour and baking powder. Beat butter, castor sugar and golden syrup till very light and fluffy. Add egg one at a time and beat again. Fold in the sifted flour mixture and milk. Divide the mixture between the prepared pans and bake in the centre of the preheated oven for 25 to 30 minutes. Insert a skewer in the centre and if it comes out clean the cakes are ready. Remove from the oven and allow to cool for 5 to 10 minutes. Remove from the tin and keep it on a wire rack.

Blanch and powder the almonds. In a food processor grind the powdered almonds, egg white and icing sugar. Cut the round cake into two equal pieces and place it on both sides of the square cake to make a heart. (See photo). Melt the apricot jam and brush on this cake and place the rolled almond paste above this with the help of a roller. Cut the excess with a knife. Mix red colour to the balance almond paste and roll it. From it cut a strip 2 inches wide and paste it around the bottom of the cake. Using a daisy cutter, cut daisy flowers and place on the cake. Place silver balls on the centre of these flowers. Instead of almond paste we can use fondant icing or butter cream icing.

STRAWBERRY AND LEMON CRUSH

 

Ingredients

Strawberries- 10

Lemon juice- 1tsp

Honey- 2 tbsp

Ice water- half cup

Crushed ice cubes-

few

To serve

Crushed ice

Strawberries sliced- 3

Method

Put strawberries, crushed ice, honey, ice water and lemon juice in the blender and puree until smooth. Taste and add extra honey if needed. Pour into long glass of crushed ice and decorate with strawberries.
